Seared scampi with apple brunoise
Gold Selection extra-virgin olive oil in a recipe that showcases a wide variety of flavours
Scampi, almonds, apples and lemon: Gold Selection extra-virgin olive oil brings out the best from even the simplest ingredients and makes them special.
Ingredients:
- 100 g Gold Selection olive oil
- 3 large langoustines
- 50 g bitter almonds
- 200 g sweet almonds
- 1 green apple
- 1 lemon
- 1 lime
- 500 ml sparkling water
- Salt and pepper to taste
Method:
1) After soaking the almonds in water for about 36 hours, drain, place in a blender with a teaspoon of salt and the sparkling water and blend until you obtain a fairly liquid, grainy, coarse mixture
2) Filter through a fine mesh sieve and reserve the milk obtained
3) Brunoise the apple (cut into cubes of approximately 3 mm) and season with a drizzle of Gold Selection extra-virgin olive oil, salt and pepper
4) Clean the scampi by removing the shell and deveining, then season with Gold Selection extra-virgin olive oil, salt, pepper, lemon zest and lime zest
5) Heat a non-stick pan and sear the scampi on the back
6) Serve the seared scampi with the apple brunoise and a few spoonfuls of almond milk, and complete with a drizzle of Gold Selection extra-virgin olive oil.
