100% Italian extra-virgin olive oil in a dish to delight your tastebuds and imagination

All you need is a little 100% Italian extra-virgin olive oil for this simple, no-cook recipe: the best way to bring out the flavour of legumes and seasonal vegetables.

Ingredients:

  • 100% Italian extra-virgin olive oil
  • 150 g boiled lentils
  • 1 orange (30 g)
  • 3-4 king prawns or striped prawns (120-150 g)
  • 30 g celery
  • 3 mint leaves
  • 30 g grape tomatoes cut into wedges
  • Salt to taste

Method:

1) Immerse the celery and prawns in a pan of boiling water, turn off the heat, stir and drain after a few minutes

2) Cut the prawns in half, peel the oranges and cut them into segments, discarding any tough parts

3) Assemble the salad by adding the boiled lentils, grape tomato wedges, celery, prawns, oranges, chopped mint leaves, a pinch of salt and a drizzle of 100% Italian extra virgin olive oil to a bowl and mixing gently

4) Plate up and finish with a drizzle of 100% Italian extra virgin olive oil.
