Lemon oil custard
Extra-virgin olive oil flavoured with lemon, in an original dessert you must try
What’s the extra something that makes this tasty dessert irresistible? It has to be Pantaleo extra virgin olive oil flavoured with lemon.
Ingredients:
- Extra-virgin olive oil flavoured with lemon
- 1 litre of fresh cream
- 50 g blanched almonds soaked in water for 12 hours
- 150 g fresh egg yolk
- 50 g corn starch
- 3 g freshly ground coffee beans
- 250 g caster sugar
- 1 vanilla pod
- 5 mint leaves
Method:
1) Bring the fresh cream with the vanilla bean seeds to the boil
2) In a separate bowl, combine the sugar, cornstarch and egg yolk and mix until smooth
3) Pour the mixture into the pan with the hot cream and heat to a temperature of 82.5 °C
4) Once the temperature has been reached, turn off the heat, pour the cream into a bowl, add the extra virgin olive oil flavoured with lemon and mix vigorously
5) Pour the cream into the serving glass and cover
6) For the accompanying salad: split the previously soaked almonds in half, add the coffee powder, a pinch of salt, the fresh mint, torn up by hand, and the extra virgin olive oil flavoured with lemon, and mix well.
7) Serve by arranging the salad on the cream and garnish with mint leaves.
