Vegan burgers for kids

Young Organic extra-virgin olive oil in a no-cook recipe suitable for the whole family

A tasty gazpacho with Young Organic extra-virgin olive oil accompanies this fresh-tasting, healthy vegan burger, that kids in particular will love.

Ingredients

  • Young Organic extra-virgin olive oil
  • 200 g boiled chickpeas
  • 1 rib of celery
  • 1 cucumber
  • 1 bell pepper
  • 15 g pitted black olives
  • 80 g halved grape tomatoes
  • 10 g red onion
  • 60 g steamed potatoes
  • 15 ml apple cider vinegar Basil Salt to taste

Method:

for the accompanying gazpacho: dice the celery, cucumber, pepper, grape tomatoes and red onion and place in a blender;

add the Young Organic extra-virgin olive oil and the vinegar and blend until you obtain a smooth mixture;

for the vegan burger: coarsely chop the pitted black olives;

coarsely mash the potatoes and chickpeas with a fork and add a pinch of salt and the previously chopped olives to the mixture;

put the mixture in an 8-10 cm hamburger mould and press;

serve by placing the hamburger on the gazpacho, and finish the dish with a salad of cucumber, pepper and basil.
