Poached egg
Olio di Puglia PGI extra-virgin olive oil in a dish that plays with tradition
A comfort food recipe reminiscent of childhood, enriched with Olio di Puglia PGI extra-virgin olive oil.
Ingredients:
- Olio di Puglia PGI extra-virgin olive oil
- 25 g spring onion
- 2 slices of home-made bread
- 1 large egg
- 1 sprig of parsley
- 100 g peas
- Salt to taste
Method:
1) Heat a little Olio di Puglia PGI extra-virgin olive oil in a pan, add the spring onion and peas and cook for a few minutes
2) In another pan, place a 10-cm round mould and fill the base with the pea and spring onion mixture, making sure to cover the entire surface
3) Pour the egg on top and cook until the egg white sets
4) Pour a drizzle of Olio di Puglia PGI extra-virgin olive oil into another pan and toast the slices of rustic bread
5) Serve by placing a slice of toasted bread and placing the egg on top and finally the peas with spring onion and finish with a drizzle of PGI extra-virgin olive oil and some parsley leaves.
